It’s the height of produce season at the Kootenai County Farmers’ Markets, which means an abundance of fresh produce every Saturday and Sunday all month! But, we’re also thinking about pickling and preserving so that those flavors last for a while in our pantries. So, it’s pickle days at the Market this weekend and next Wednesday! Our farmers are featuring all the pickle things, from cucumber and other veggies to dill, garlic, onions, and more. We also have fruit wines and infused vinegars to add to your pickle jars. Have you ever had lemon cucumber refrigerator pickles? Or pickled broccolini, jalapenos, carrots, beans, zucchini, onions, berries? So many options! Come talk to our farmers and discover what new pickled foods you can make this year.
Keeping our dollars in our communities and consuming locally-grown and raised foods keeps us healthier and more resilient than filling our baskets with processed foods. What fresh produce is on your Market shopping list this weekend? Join us Saturday and Wednesday and fill your bag with the season’s best here at the height of summer.

Blue Wildrye Farm: If you’ve been waiting for our pasture-raised chickens to return to the store, they’re back! We choose Freedom Rangers because they’re a breed particularly well suited to pasture. They’re slower-growing and more active than conventional grocery-store meat chickens, producing a bird with rich, old-fashioned chicken flavor, pleasantly firm meat, and a wonderful balance of light and dark meat. There’s something wonderfully simple about roasting a whole chicken for dinner. Season it with salt, pepper, garlic, and fresh herbs and let the bird do the rest. Freedom Rangers have enough natural flavor to make even a simply prepared roast chicken feel special. They’re equally at home on the grill or smokerāand don’t toss that carcass when dinner is over! The bones and trimmings make a deeply flavorful homemade chicken stock for soups, sauces, and another meal later in the week. One chicken. A beautiful dinner. And the beginnings of the next one.
