Most oil-based salad dressings start the same way: 2/3 oil, 1/3 apple cider vinegar or lemon juice. Add a little salt and your choice of herbs (fresh or dried). Shake or blend. It's that simple!
Here's my favorite combination:
2/3 olive oil
1/3 apple cider vinegar
1/2 t salt
2 T garlic powder (or a clove or two of fresh garlic)
2 t dried basil (or a small handful of chopped leaves)
Variations: If you prefer a creamier dressing, add 1/2 avocado. For an Asian twist, replace apple cider vinegar with rice vinegar and add 1/2 c tahini. Blue cheese and chopped green onion are other delicious additions. Be creative!
