Whether you are making your favorite wild rice and mushroom soup, or any seasonal squash soup, add in a cup or two of cooked wild rice to give it some added texture, flavor, vitamins, and protein. Did you know that wild rice is full of flavonoids? Flavonoids are anti-inflammatory. Wild rice is considered a good anti-inflammatory food, full of vitamin B’s, magnesium, manganese, and fiber. Creamy Wild Rice Soup
Recipe by Northern Latitude Foods
Servings
4 Servings
Cooking Time
1 hour
Ingredients
- 4 cups duck or beef stock
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 carrot, pared and chopped
- 1 tsp. peppercorns
- 1/2 tsp. dried thyme
- 1/2 tsp. dried parsley
- 1 bay leaf
- 1/2 cup wild rice
- 1/4 cup butter, softened (half a stick)
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream
- handful of fresh spinach, kale or other greens
- salt and pepper to taste
Instructions
- Bring the stock, onion, celery, carrot, peppercorns, thyme, parsley, and bay leaf to a boil in a large pot. Reduce heat and simmer for 15 minutes.
- Meanwhile, cook the wild rice in 2 cups of water until tender, about 25 minutes. Drain and set aside.
- Strain the stock into a separate container. You can keep the veggies to add back in or discard.
- In the pot over medium heat, melt the butter and whisk in the flour. Cook for a couple minutes stirring constantly – do not brown!
- Add the stock back to the pot and whisk with the butter/flour mixture until slightly thickened. Add the rice and veggies, if using, and simmer for 20 minutes.
- Stir in the cream and greens. Heat through, but do not boil. Enjoy!
