Pick up the Limonana blend of dried herbs from the Tea Lady at Tea.Health.Honey for this recipe!
- 1 cup filtered water
- 1/3 cup sugar
- 2 Tbs Limonana Tea blend (mint, lemon balm, and lavender)
- 3/4 cup freshly-squeezed lemon juice about 3 lemons
- 1 small bunch fresh mint leaves optional
- 4 cups ice cubes
-
Start by making an herbal syrup. Combine the water, sugar, and dried herbs in a small saucepan. Bring to a boil, stirring until the sugar dissolves. Simmer for 1 minute. Then, remove from the heat and steep, covered, for about 30 minutes. Strain and place in the refrigerator to cool completely.
-
When the syrup has chilled, add it to a blender with the fresh mint and lemon juice. Blend, then add the ice and blend again to make a thick slushy.
-
Pour into glasses, garnish with mint, if desired, and enjoy immediately!
Stuff these with TerraTopia's marinated goat cheese mozzarella and sausage from one of our ranchers!
- 1/2 lb bulk Italian sausage, cooked and crumbled drain the fat
- 4 oz marinated mozzarella
- 4 oz softened cream cheese
- 1/2 Tbs minced fresh garlic (or 1/2 tsp garlic powder) Get it from Royal Highlands!
- 1/2 tsp dried marjoram
- 1 tsp Herbs de Provence
- 1/2 tsp sea salt, divided
- black pepper, to taste
- 12 large capped mushrooms
- 1/4 cup extra virgin olive oil
- 1/2 lb garlic scapes
-
Combine the all ingredients, except mushrooms and oil, in a bowl and set aside. Toss the garlic scapes with a little olive oil and season with 1/4 tsp salt and some pepper.
-
Clean any dirt off the mushrooms with a damp paper towel or brush. Remove the stems and finely chop. Mix them into the filling.
-
Brush inside and outside of each cap with olive oil. Stuff by gently pressing the filling into each cap until all the filling is used. Place the caps on a rack that will fit on your grill.
-
Preheat your grill to 375℉ with indirect heat. Place the rack of mushroom caps, as well as the garlic scapes, on the grill and close the lid. Grill for 10-15 minutes or until filling is heated through and the scapes are slightly charred, cheese is melty, and mushrooms are tender and juicy. Enjoy!
-
Note: These can be roasted in the oven for the same amount of time. Finish off with a few minutes under the broiler, if desired.
