Ingredients

  • 1/2 lb bulk Italian sausage, cooked and crumbled drain the fat
  • 4 oz marinated mozzarella
  • 4 oz softened cream cheese
  • 1/2 Tbs minced fresh garlic (or 1/2 tsp garlic powder) Get it from Royal Highlands!
  • 1/2 tsp dried marjoram
  • 1 tsp Herbs de Provence
  • 1/2 tsp sea salt, divided
  • black pepper, to taste
  • 12 large capped mushrooms
  • 1/4 cup extra virgin olive oil
  • 1/2 lb garlic scapes

Instructions

  1. Combine the all ingredients, except mushrooms and oil, in a bowl and set aside. Toss the garlic scapes with a little olive oil and season with 1/4 tsp salt and some pepper.

  2. Clean any dirt off the mushrooms with a damp paper towel or brush. Remove the stems and finely chop. Mix them into the filling.

  3. Brush inside and outside of each cap with olive oil. Stuff by gently pressing the filling into each cap until all the filling is used. Place the caps on a rack that will fit on your grill.

  4. Preheat your grill to 375℉ with indirect heat. Place the rack of mushroom caps, as well as the garlic scapes, on the grill and close the lid. Grill for 10-15 minutes or until filling is heated through and the scapes are slightly charred, cheese is melty, and mushrooms are tender and juicy. Enjoy!

  5. Note: These can be roasted in the oven for the same amount of time. Finish off with a few minutes under the broiler, if desired.
