Surprise your Dad with a Mediterranean BBQ on Father’s Day! Serve with roasted baby potatoes with a light coat of olive oil, garlic and rosemary and add a fresh spring green Farmers’ Market salad. You will certainly make Dad’s day! (full recipe below)

Power of Produce (PoP) Club!
Operated by the Inland Northwest Food Network, the program seeks to encourage children to make healthy food choices by empowering them to shop for, grow and prepare fresh fruits and vegetables. Children between the ages of 5-12 are eligible to participate in the program free of charge. Each week club members will receive a token worth $2 to purchase a fresh fruit, vegetable or plant at participating farmer booths at the market, or they can choose to save their tokens to buy a larger item such as a fruit tree.
This Week’s Activity: Super Salad Saturday!
Spotted on the Farm…
RAJNIÇA – CROATIAN LAMB KEBAB SKEWERS (raj-knee-cha)
- 1 cup dry red wine
- ¼ cup lemon juice
- ½ cup olive oil
- ½ cup finely chopped onions
- 2 sprigs fresh rosemary
- 1 sprig parsley
- 2 bay leaves
- 3 crushed garlic cloves
- Pinch of nutmeg
- 1 Tblsp. Sugar
- 1 Tsp. salt

Combine the ingredients above for the Marinade:

Lamb preparation: For best results use leg of lamb. Trim lamb by removing fat and silver skin. Cut 2-4 pounds of leg of lamb into 1” cubes (1/2 lb per person)

Marinate approximately for at least 2 to 3 hours.

Place lamb on bamboo skewers to BBQ.

Grill for approximately 3-5 minutes per side (don’t overcook!).

Finely chop some additional onion and roll kebabs or sprinkle and press on the kebabs and serve.
