About Us
Hello from Cocolalla! We’re Sara Marshall and Steve Stevick, the cheesemakers, farmers, dreamers, owners, milkers and caretakers at Eagle’s Dell Farm. Yes, we work hard, but this life is truly our passion.
As cheesemakers, our style reflects our personalities… adventurous, spontaneous, and creative. We love exploring and making a wide variety of fresh, ripened, aged and dried cheeses using recipes we’ve gathered from around the globe, and occasionally (sometimes by accident!) we’ll come up with our own creations to add to the mix. We love the rich history behind some of the cheeses we discover, and due to the varying and sometimes lengthy aging times for each cheese type, you’ll find a different selection from week to week depending upon what’s mature and ready in the “cheese cave”.
Having both goats and cows that we personally milk daily on our farm, we’re able to monitor the changing milk of the seasons (or breed) and match our creations to sync well with the butterfat and quantity of our milk. We’re careful to feed our girls only the highest quality alfalfa and grass hay, along with some specifically blended grain for our milking team, which keeps them all healthy and producing lots of sweet, butterfat-rich and creamy milk for us. Our farm management practices focus on clean, natural, preventative care, so our animals are healthy, happy, pampered producers.
Our small farm started as a dream almost a decade ago, and it’s grown from a handful of goats just a couple years ago to peaking at over 50 goats during kidding season, including Mini Nubians, Nubians, Lamanchas, and Nigerian Dwarf, along with our latest addition of two beautiful Dutch Belted Cows and a calf. We also have a garden and small, young orchard to produce some of the fabulous fresh herbs, fruits and vegetables we’ll offer in our bundles as available.
