Fresh Raspberry Pie
The heat of August signals the height of summer harvest for many of our farmers. This time of year you can enjoy abundant fruits and berries in addition to the widest selection of farm-fresh vegetables of the season.

World Breastfeeding Week:
The World Health Organization has designated August 1-7th as World Breastfeeding Week. Our Community Booth (next to the Manager’s Booth) will be occupied this week by a local non-profit providing breastfeeding support to local mothers.
Power of Produce (PoP) Club for KidsThis week’s activity: Oodles of Zoodles! Kids will create a dish using spiral vegetables. |
Kids’ Day:
Calling all young entrepreneurs! Do you make a craft or grow vegetables or flowers? Kids between the ages of 8-12 can qualify for a free booth space during Kids’ Day on August 25th. Pick up an application at the manager’s booth.
This is an easy and delicious way to enjoy the bright flavors of sweet raspberries.
- 1 pre-baked pie shell
- 1 cup sugar
- Dash of salt
- 2 rounded Tbls. cornstarch
- 1 cup water
- 1/2 tsp. almond extract
- 2 cups fresh Raspberries
- Whipped cream for topping

Crush 1/3 cup of the fresh berries and set aside.

Combine sugar and cornstarch in a saucepan. Add water and crushed

berries. Cook over medium heat stirring constantly until thick and glossy.

Remove from heat and add remaining berries and almond extract. Pour into

prepared pie shell. Chill in fridge several hours until set. Serve with fresh
-
whipped cream.
