Summer is fully under way at our farms and ranches! That means plenty of fresh produce, creamy dairy, and juicy meat for grilling and picnic foods. Ramstead Ranch has pasture-raised Berkshire Pork Chops, four in a pack, and a handful or recipes to take with you. Pair them with our Summer Market Salad recipe below featuring Jake Rider’s Oyster Mushrooms, Kerr Sunflower Microgreens, fresh summer greens and herbs, market goat cheese (your choice), and market honey (your choice!). You can also caramelize some sliced organic Walla Walla Onions from Killarney Farm on the grill to go with your chops or steaks. Baked Goodies
This weekend, Black Forest Bakery is bringing all the creamy goodness with Dandelion Cream Cake, Burnt Almond Cake, and Strawberry Cream Puffs. The strawberries and dandelions are from their garden, and the scrumptious Bavarian cream is made from scratch.
Simply Sweet Cottage Treats, along with their regular popular menu, will be serving Green Chili and Cheddar Scones as well as Pull-Apart Brown Butter Everything Bagel Bread. Wow. That sounds like a delicious mouthful!
And don’t forget to reserve your bagels of loaf of crusty sourdough bread from MaK Bread on their website before each market! It means skipping the lines and digging in to the pillowy loaf sooner rather than later.
PoP Club This WeekPoP Club is a free market program for kids ages 5-12 that introduces them to healthy produce with fun hands-on activities and challenges that are fresh and new each week. When a child completes an activity, they get a $2 token that they can redeem around the market for fresh fruit, vegetables, and food-bearing plants. Straight from the market, this fresh summer salad is perfect alongside your grill.
- 10 oz goat cheese
- 2 eggs, slightly beaten
- 1 cup panko breakcrumbs
- 2 tsp sea salt
- 1 tsp organic cane sugar
- 1 tsp crushed red pepper flakes
- 2 Tbs local honey
- 1.5 Tbs local honey
- 1.5 Tbs Balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 7 cups Killarney Mesclun Salad Mix
- 2 cups Kerr Sunflower Microgreens
- 1/3 cup radishes, thinly sliced
- 2 Tbs fresh parsley, chopped
- 2 Tbs Rider oyster mushrooms, chopped
- 1.5 cups Emerald Dreams organic blueberries

Preheat the oven to 450° F. Grease a baking sheet.

Shape the goat cheese into 20 similar-sized balls. Whisk the eggs in a small bowl. Combine the panko, sugar, salt and pepper flakes in another bowl. Dip the cheese balls first into the egg, then the breadcrumbs, to coat. Chill in the fridge for 10-15 minutes, then place on the prepared sheet and bake until golden, about 8-10 minutes. Remove from oven and drizzle with honey.

For the dressing, whisk the honey, vinegar, and oil in a bowl and season to taste.

Combine all the salad ingredients in a large bowl and toss, or you can layer them.

Serve the salad in individual bowls tossed with the dressing and nuggets on top, or set out for guest to serve themselves. Enjoy!
