Summer Foccacia Tiles

No kneading required! Top with any fresh veggies from the market. Great with garlic scapes, too!

Ingredients

  • 4 cups all purpose flour
  • 1/4 tsp active dry yeast
  • 1 tsp sea salt
  • 1 2/3 cups warm water
  • extra virgin olive oil
  • toppings: sliced peppers, tomatoes, onions, olives, garlic slices, garlic scapes, garlic powder, rosemary, oregano...your choice!

Instructions

  1. Combine 3 cups of the flour, yeast, salt, and water in a large bowl until a soft dough forms. Cover and let rise 12-24 hours.

  2. Stir the remaining flour into the dough, then push the dough into the prepared pan. Let rest an hour. Oil a 15"X10" baking pan with olive oil. Preheat oven to 400℉.

  3. Score dough into 6 portions with a sharp knife. Gently press toppings into sections, then drizzle with olive oil and spring herbs - or toppings of your choice. Bake 30-35 minutes.

  4. Cut into 6 tiles using the scoring marks. Serve warm and enjoy!
