Spiced No Bake Blueberry Crumble

Use summer fresh blueberries in this simple, no bake dessert that also makes a lovely breakfast.

Ingredients

Crumble

  • 1 cup almonds
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 cup pitted Medjool dates

Filling

  • 4 cups ripe blueberries
  • 1/4 cup agave syrup
  • Greek yogurt, ice cream, or whipped cream for topping (optional)

Instructions

  1. Combine the almonds, spices, and salt in a food processor. Pulse into coarse pieces - don't blend! Add the dates and pulse until well mixed and crumbly.

  2. Combine the berries and agave syrup in a mixing bowl and toss to evenly coat.

  3. Assemble in a loaf pan with blueberries on the bottom and crumble on top. Or build a bowl or parfait glass at a time. Top with your favorite ice cream, whipped cream, or Greek yogurt and enjoy!
