Grandma's Pickled Beets

Sweet spring beets are in season! Make this scrumptious picnic snack with Market beets.

Ingredients

  • 1 1/2 - 2 lbs fresh beets
  • 1 cup filtered water
  • 1 1/3 cup cane sugar
  • 3/4 cup white or apple cider vinegar
  • 2 large cinnamon sticks
  • 3 cloves

Instructions

  1. Trim the beets and steam them until knife tender. Peel the skins, cool, and cut into thin slices.

  2. Add the water, sugar, and vinegar to a pot and bring to a boil. Add the beets, cinnamon, and cloves, and return to a boil. Cover and remove from heat.

  3. Allow the beets to steep for at least 15 minutes. Pour everything into a large glass jar or multiple jars, cover, and refrigerate. You can also can these directly off the heat in hot, sanitized jars.

  4. Enjoy as a side with BBQ and a salad!
