Garlic Scapes with Mushrooms and Carrots

Ingredients

  • 1 Tbs butter
  • 20 garlic scapes, cut into 3-inch pieces
  • 8 oyster mushrooms, cleaned and sliced about 2 cups
  • 1 large carrot, chopped roughly 3/4 cup
  • 2 tsp fresh thyme, chopped
  • 1/2 tsp lemon zest
  • sea salt and pepper to taste

Instructions

  1. Heat the oil in a large sauté pan over medium high heat. Add the mushrooms and carrots and cook until softened and edges of mushrooms begin to brown, about 4 minutes.the mushrooms

  2. Stir in the garlic scape pieces and cook until they've begun to brown slightly. Add the thyme, lemon zest, salt, and pepper, and cook for another minute.

  3. Serve warm alongside your favorite main grilled foods and enjoy!
