Ingredients

  • 1 lb Wildrye kabob sirloin beef
  • 8 oz Young Shin's Korean Samjang garlic chili sauce
  • 2 large cucumbers (about 3 cups sliced)
  • 2 Tbs Shoyu or Tamari soy sauce
  • 4 Tbs rice vinegar
  • 1 Tbs honey or maple syrup
  • 1 tsp Korean (Gochugaru) or regular red chili powder
  • 1/2 tsp sesame seeds
  • 2 green or spring onions, chopped
  • 2 cups cooked Northern Latitude Organic Idaho Wild Rice (optional)
  • Young Shin's Korean kimchi (optional)

Instructions

Skewers

  1. Heat up the grill or a grill pan under the broiler in your oven. Soak wooden skewers in warm water for a few minutes.

  2. Add a little bit of water to 1/2 cup of the Samjang sauce to thin. Pour over the meat, mix to coat, and marinate for at least 15 minutes.

  3. Skewer the meat and cook on the hot grill about two minutes per side, until done.

Cucumber Salad

  1. Thinly slice the cucumbers with a mandolin or knife and place in a serving bowl.

  2. In a small bowl, mix together the soy sauce, vinegar, and sweetener. Pour over the cucumbers.

  3. Sprinkle with the chili powder, or to taste, and the sesame seeds. Mix, taste, and adjust chili powder to your liking.

  4. Add the green onions. Mix and serve immediately.

Serving

  1. Enjoy the skewers over rice with additional Samjang sauce and/or kimchi and with the salad on top or on the side.
