Ingredients

  • 1 pie crust
  • 4 chicken or duck eggs from a local farmer
  • 1/2 cup whole milk
  • 1/2 cup heavy whipping cream
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped roasted hatch green chiles or other roasted peppers
  • 1/2 cup cooked ground sausage
  • 1 1/2 cups add-ins of your choice (recommended: bacon, spinach, onions, mushrooms)
  • salt, pepper and Sandia Spice's Green Chile Seasoning

Instructions

  1. Preheat your oven to 375℉.

  2. Line a pie pan with the pie crust and blind bake it for 20 minutes.

  3. Meanwhile, in a large bowl with a hand mixer, or using an electric mixer, beat the eggs, milk, and cream for 1 minute, until foamy. Mix in the remaining ingredients and season to taste.

  4. Remove the crust from the oven and cool slightly. Lower the oven temperature to 350℉.

  5. Pour the egg mixture into the pie crust. Return to the oven and bake 45-55 minutes, until the center is set.

  6. Serve warm or cold. Enjoy with a salad of market greens and veggies!
