Mediterranean Roasted Spring Root Vegetables

The perfect market side dish for Father's Day grilled or smoked meats!

Ingredients

  • 1/2 Cup extra virgin olive oil
  • 3 Tbs local honey
  • 1 Tbs Sandia Spice Mediterranean Seasoning
  • 3 lbs mix of baby carrots, salad turnips, and spring radishes
  • 1 container Country Blessings Labneh or Roasted Garlic Sundried Tomato Fromage
  • 1 tsp red pepper flakes optional
  • sea salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 450°F.

  2. In a small bowl, whisk together the oil, honey, and spice with a fork until well combined. Season to taste with salt and pepper. Set aside 2 Tb.

  3. Toss the vegetables with the remaining dressing and spread out in a single layer on a rimmed baking sheet. Roast in the preheated oven for 18-20 minutes until caramelized to your taste. Cool slightly.

  4. Spread the labneh or fromage in the bottom of a shallow bowl or dish and place the still-warm veggies on top. Drizzle with the reserved dressing and sprinkle with red pepper flakes, if desired.
