Roasted Beet, Heirloom Tomato & Goat Cheese Salad

Use fresh market ingredients to make this summer recipe!

Ingredients

  • 2 medium red or striped beets
  • 3 small-medium Deerfield heirloom tomatoes
  • 1 bunch radishes, tops removed
  • 2 Tbs fresh cilantro, roughly chopped
  • 1/2 cup crumbled goat cheese
  • 2 Tbs lemon juice
  • 3 Tbs extra-virgin olive oil
  • flake sea salt, or to taste
  • freshly ground black pepper, or to taste

Instructions

  1. Scrub beets well, slice off the root base and stem point, and steam in a steamer basket on the stove until fork-tender. Run under cool water, peel off the skins, and slice. Set aside to thoroughly cool.

  2. Wash tomatoes and radishes, and slice them. Set aside.

  3. In a small bowl, whisk the lemon juice, olive oil, salt and pepper until well combined. Set aside.

  4. On a serving platter, layer the sliced beets, tomatoes and radishes. Sprinkle with the cilantro and cheese, and drizzle with the dressing. Serve immediately and enjoy!
