Kale Salad with Peanut Butter Dressing

This easy kale salad can convert anyone who claims to dislike kale.

Ingredients

  • 2 large bunches curly kale, ribs discarded and greens chopped about 10 cups
  • 1 yellow, orange or red bell pepper, ribs and seeds removed and flesh chopped
  • 2 medium carrots, grated
  • 1/2 cup extra virgin olive oil or sunflower oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup freshly ground peanut or almond butter
  • 2 tbsp packed brown sugar or honey
  • 1/2 tsp sea salt
  • 1/4 cup hemp seeds (optional)

Instructions

  1. Place kale, bell pepper, and carrot into a large bowl. Toss to combine.

  2. In a blender, combine the oil, vinegar, peanut butter, sweetener, and salt, and blend to emulsify. Don't over-blend or it will become too goopy!

  3. Pour the dressing over the salad and massage into the greens for 20-30 seconds. Allow to sit for at least 5 minutes before serving. Serve sprinkled with hemp seeds, if desired.
