This easy kale salad can convert anyone who claims to dislike kale.
Place kale, bell pepper, and carrot into a large bowl. Toss to combine.
In a blender, combine the oil, vinegar, peanut butter, sweetener, and salt, and blend to emulsify. Don't over-blend or it will become too goopy!
Pour the dressing over the salad and massage into the greens for 20-30 seconds. Allow to sit for at least 5 minutes before serving. Serve sprinkled with hemp seeds, if desired.
