Fresh Raspberry Pie

This is an easy and delicious way to enjoy the bright flavors of sweet raspberries.

  • 1 pre-baked pie shell
  • 1 cup sugar
  • Dash of salt
  • 2 rounded Tbls. cornstarch
  • 1 cup water
  • 1/2 tsp. almond extract
  • 2 cups fresh Raspberries
  • Whipped cream for topping


  1. Crush 1/3 cup of the fresh berries and set aside.
  2. Combine sugar and cornstarch in a saucepan. Add water and crushed
  3. berries. Cook over medium heat stirring constantly until thick and glossy.
  4. Remove from heat and add remaining berries and almond extract. Pour into
  5. prepared pie shell. Chill in fridge several hours until set. Serve with fresh
  6. whipped cream.
