Roasted Beet Hummus


Ingredients

  • 4 medium beets
  • 2 Tbsp tahini (sesame paste - found in the health food section of most grocery stores)
  • 5 Tbsp lemon juice
  • 1 clove garlic chopped
  • 1 Tbsp ground cumin (optional)
  • 1 Tbsp lemon zest
  • 1 pinch salt (to taste)
  • ground pepper (to taste)
  • olive oil (for roasting)

Instructions

  1. Cut tops off the beets, quarter and coat with olive oil.  Place on cookie sheet or roasting pan in oven and roast at 350 degrees until tender (20-30 minutes, depending on size).  Allow to cool, then slip the skins off with your fingers.  Add all ingredients to blender or food processor and mix until smooth.
