After School Farmers Market Snack Board

Get all the ingredients you need to create healthy snack options for your kids when they get home from school

Ingredients

  • hard and soft cow and goat cheeses
  • jam or jelly
  • 5 boiled eggs
  • 3-4 Tbs mayonaise or Veganaise
  • 2 tsp yellow mustard
  • sea salt and pepper, to taste
  • strawberries and raspberries
  • apples and pears
  • 1 small melon
  • carrots
  • cucumbers
  • green beans
  • sweet peppers
  • cherry tomatoes
  • market cookies and/or brownies
  • 1/2 cup nut or seed butter

Instructions

  1. Set out a large serving plate, board, or tray - you can even use a cookie sheet or baking dish!

  2. Slice hard cheeses, apples, and pears and arrange them on the tray. Cut carrots and cucumbers into sticks or rounds. Cut the sweet peppers into sticks or boats. Arrange all on the tray with the green beans and tomatoes.

  3. Cut the brownies into bite-size pieces and arrange with the cookies.

  4. In a small bowl, combine the soft cheese with some jam, stirring to make it even. Place the nut butter in a separate small bowl. Place with or on the tray for dipping.

  5. Cut the boiled eggs in half and scoop the hard yolks into a small mixing bowl. Add the mayo and mustard, and season to taste. refill the centers of the boiled eggs with the mixture and arrange on the tray.

  6. If making ahead of time, cover with plastic wrap and keep in the fridge until ready to serve. Serve as is and enjoy!
