Roasted Parmesan Kohlrabi

Kohlrabi is in season! Here's a simple recipe for making it delicious.

Ingredients

  • 6 kohlrabi
  • 2 Tbs extra virgin olive oil
  • 3/4 tsp sea salt
  • pinch cayenne powder or paprika
  • 3 Tbs grated parmesan
  • 1 Tb chopped fresh parsley

Instructions

  1. Preheat the oven to 450℉. Wash and peel the kohlrabi and cut into medium wedges.

  2. Drizzle with the olive oil and add the salt and cayenne. Toss to coat.

  3. Roast in the preheated oven about 30 minutes, until golden and tender. Stir every 10 minutes.

  4. Remove from the oven and toss with the cheese and parsley. Serve warm and enjoy!
