Spring Sugar Snap Pea Salad

This simple spring recipe incorporates all the flavors of the market. Pair with chicken skewers hot off the grill!

Ingredients

  • 1 cup thinly sliced radishes
  • 1 1/2 cups sugar snap peas, sliced
  • 1 cup crumbly goat cheese
  • 1/3 cup mint leaves, torn
  • 1 clove garlic, minced
  • 1 Tb lemon juice
  • 1 Tb white or regular balsamic vinegar
  • 3 Tbs extra virgin olive oil
  • sea salt and black pepper, to taste

Instructions

  1. In a large salad bowl, toss together the radishes, peas, and mint.

  2. In a separate bowl or jar, combine the garlic, a pinch of salt, lemon juice, vinegar, and olive oil. Whisk or shake vigorously to combine. Season with salt and pepper, to taste.

  3. Pour the dressing over the salad and toss to coat and combine well. Crumble the cheese over the top and mix gently. Adjust seasoning to taste.

  4. Serve cold and enjoy!
