Oven-Baked Plum Pudding

This recipe is delicious with Italian Prune Plums!

Ingredients

  • 3/4 cup sugar, plus more to coat pan
  • 8 prune plums, washed, pitted and sliced
  • 3 large eggs
  • 1 1/2 cups half and half cream
  • 2 tsp vanilla
  • 1/2 cup AP flour or Gluten Free 1-1 flour
  • 1/2 tsp sea salt
  • unsalted butter
  • powdered sugar

Instructions

  1. Preheat your oven to 400°F. Grease a 2-quart baking dish with the butter and dust with some sugar.

  2. In a food processor, pulse the eggs and 3/4 cup of sugar just until combined. Start the processor running, and stream in the half-and-half and vanilla. Turn off, add the flour and salt, and pulse until combined. When done, let it stand for 10 minutes.

  3. Place the plum slices evenly along the bottom of the dish. Pour the custard over the plums.

  4. Bake in the pre-heated over for 15 minutes. Lower the heat to 350°F and continue baking until the custard is set and turns golden, about 20-25 minutes.

  5. Cool slightly, dust with powdered sugar, and enjoy warm!
