Tomato Harvest Arugula Salad with Goat Cheese

Ingredients

  • 2 lbs heirloom or slicer tomatoes
  • 6 oz arugula
  • 4 oz soft goat cheese
  • 1 large shallot
  • 1/4 cup extra virgin olive oil
  • 2 Tbs balsamic vinegar
  • 2 tsp local honey
  • 2 Tbs finely chopped fresh herbs of choice

Instructions

  1. Slice the tomatoes into thick rounds. Divide the tomatoes among four plates. Top each with a handful of arugula.

  2. Crumble the goat cheese over the salad.

  3. Chop the shallot and divide evenly over the salads.

  4. In a small bowl, whisk together the remaining ingredients to make a vinaigrette. Drizzle over each salad, to taste.

  5. Serve immediately and enjoy!
