Mushroom Pulled "Pork"

Ingredients

  • 4 King Oyster Mushrooms (@3 cups)
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/4 tsp sea salt
  • 1/4 tsp cayenne pepper
  • 2 Tbs extra virgin olive oil
  • 1/4 cup BBQ sauce

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper

  2. Clean the mushrooms of any dirt with a damp paper towel. Using 2 forks, shred the stems and caps into rough pieces. Spread out on the prepared sheet. Sprinkle with 1 Tbs of the oil, the spices, garlic, and salt. Toss to evenly coat. Bake for 20 minutes, until crispy and brown on the edges.

  3. Heat the remaining oil in a large saute pan over medium high heat. Add the baked mushrooms and drizzle with the BBQ sauce. Stir and cook for 3-5 minutes, until fragrant and thickened.

  4. Serve warm on a sandwich, with roasted potatoes, or in tacos.
