Baked Italian Cheesy Tomatoes

Perfect as a side or main course, this simple dish is complex in flavor and made with fresh market ingredients.

Ingredients

  • 1-2 lbs fresh goat, buffalo, or cow mozzarella, sliced
  • 2-3 medium ripe tomatoes, sliced
  • fresh basil
  • 1 lb ground Italian sausage, cooked
  • extra virgin olive oil
  • sea salt and freshly ground pepper, to taste

Instructions

  1. Pre-heat oven to 350°F. Drizzle a little olive oil in the bottom of a cast-iron or other oven-safe pan.

  2. Layer the sliced tomatoes on the bottom of the pan, top with the mozarella, then the basil and finally the sausage.

  3. Bake for about 10 minutes, until the cheese begins to melt. Finish under the broiler for a slight crisp on the cheese.

  4. Enjoy as is or on top of a slice of sourdough toast with a fried egg.

  5. Note: Switch up the toppings to your taste! Vegetarian? Substitute the sausage for sauteed mushrooms and peppers. Try a goat mozzarella or cheddar.
