RAJNIÇA – CROATIAN LAMB KEBAB SKEWERS (raj-knee-cha)

Ingredients

  • 1 cup dry red wine
  • ¼ cup lemon juice
  • ½ cup olive oil
  • ½ cup finely chopped onions
  • 2 sprigs fresh rosemary
  • 1 sprig parsley
  • 2 bay leaves
  • 3 crushed garlic cloves
  • Pinch of nutmeg
  • 1 Tblsp. Sugar
  • 1 Tsp. salt

Instructions

  1. Combine the ingredients above for the Marinade:

  2. Lamb preparation: For best results use leg of lamb. Trim lamb by removing fat and silver skin. Cut 2-4 pounds of leg of lamb into 1” cubes (1/2 lb per person)
  3. Marinate approximately for at least 2 to 3 hours.
  4. Place lamb on bamboo skewers to BBQ.
  5. Grill for approximately 3-5 minutes per side (don’t overcook!).
  6. Finely chop some additional onion and roll kebabs or sprinkle and press on the kebabs and serve.
