Farm Fresh Peach Cobbler

I've made a lot of Peach Cobbler over the years, and this is by far my favorite recipe.  It's unique in that the peaches are placed on TOP of the cobbler, which bubbles up around and over them during the cooking process.  It's really delicious!

Ingredients

Batter

  • 1/2 c melted butter
  • 1 c flour
  • 1 c organic cane sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 c raw cow's milk
  • 1 free-range egg

Filling

  • 5-6 ripe locally-grown peaches sliced, skin and pits removed
  • 1 c organic cane sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Blanch peaches by dropping into a large pot of boiling water for approximately 1 minute.  Remove and place in ice bath.  Skin peach with a knife and cut into slices (discard pit).  Melt butter in a 9x13 inch pan.  Mix together flour, sugar, baking powder and salt.  Stir in milk and egg.  Pour evenly over the melted butter.  Combine the peaches, sugar and spices and spread OVER the batter.  DO NOT STIR!  Bake at 350 degrees for 35-45 minutes, until golden brown.  Serve with whipped cream or ice cream.
